Don’t be fooled. This picture isn’t mine, nor is the recipe. This is where I got the recipe. My chicken would never turn out this pretty!! ): Maybe I should take some classes on food presentation… because that matters a whole lot when you are at home eating with your husband. (A husband, who I may add, will eat almost anything) This recipe was AMAZING! Jon and I both loved it, but I love cheese. It was relatively simple to make, too. Not a crock pot this time, but just baking it in the oven. It is pretty cheap. The only thing I had to splurge on was cheese and Ritz Crackers… why is cheese so darn good and expensive! ARGH!
2 lbs chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter
- First thing’s first, crush the crackers!! Have fun with it. Pretend like you are crushing your fears! Or the Earth! Or, just crackers if you would prefer, but know that you are no fun. Separate the milk, cheese, and cracker crumbs into bowls. Mix the salt and pepper into the crackers.
- Now for the chicken! Dip the chicken into the milk, then the cheese. Press the cheese into the chicken with your fingers. This can be tricky because the cheese will want to stick to your fingers (or maybe not, depends on your relationship with the cheese, but we were close) Then press the cracker crumbs into the chicken over the cheese.
- Spray whatever pan you are using, (I think I used a 9×13 pan) and spray it with non-stick spray. For easier clean-up, I put foil in the bottom of my pan and then sprayed the foil. Place the chicken in the pan and sprinkle dried parsley over it. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.
- Now for the sauce… I’m going to note that my sauce didn’t turn out ANYTHING like it was supposed to so I didn’t really use it. In a medium size sauce pan, combine cream of chicken soup, sour cream, and butter with a whisk. Stir over medium heat until hot and serve! I hope your sauce is better than mine…
