Since the beginning of this year, Jon and I have been trying to eat a little healthier… ish. So I have been using our crock pot like crazy! I though I would share some of these recipes with you that turned out pretty well! This recipe came out of a crock pot recipe tin, and Jon and I both liked it well enough. It is pretty low cost because some of these ingredients are something most people usually have on hand and don’t have to buy often.
Chicken and Stuffing
1/2 cup all-purpose flour
3/4 teaspoon salt
3/4 teaspoon black pepper
4-6 boneless, skinless chicken breasts (about 1 to 1 1/2 pounds)
1/4 cup butter
2 cans condensed cream of mushroom soup, undiluted
1 package (12 oz) seasoned stuffing mix, plus ingredients to prepare mix (I chose chicken stuffing)
1. Combine flour, salt, and pepper in large resealable food storage bag. Add chicken; seal bag. Shake to coat flour mixture.
2. Melt butter in large skillet over medium-low heat. Brown chicken on both sides. Place in crock pot slow cooker; pour soup over chicken.
3. Prepare stuffing according to package directions, decreasing liquid by half. Arrange stuffing over chicken. Cover; cook on HIGH 3-4 hours.
Things I would do differently… I cut up 2 large chicken breasts into 4 one pound breasts which was fine, but I was left with an excess of soup and stuffing so I would recommend using 6 chicken breasts. Other than that, it was great. I served it with mashed potatoes and carrots. (:
